In a blender, mince the bonelesschicken. Add salt as peryour taste, half teaspoon pepper, halfteaspoon gingergarlic paste or powder, halfteaspoon to 1 teaspoon chili powder or paprika adjustit as per your spice level, 1 teaspoon mixed herbs of your choice, 1tablespoon cornstarch,and 1 cup of shreddedmozzarella cheese. Combine well to form a chicken mixture.
Make a chicken roll of your preferred size and dust it with all purposeflour. Keep it aside.
In a separate bowl, beat the eggs and keep it aside.
Dip the chicken rolls in the beaten eggs, then into the homemade breadcrumb mixture, and shake off excess. You can freeze them and fry themwhenever you want.
Place the chicken rolls on a cutting board or tray and spray both sidesof the chicken generously with oil.
Preheat the airfryer to 370 degreesFahrenheit for a couple of minutes.
In batches, cook the chicken rolls for 5 to 6 minutes on each side untilthey are cooked through and crispy and golden on the outside.
Once done, the crispy airfryerchicken fingers are ready to serve.
