Ingredients:
- 1 pound boneless chicken, cleaned and dried
- Salt, to taste
- 1/2 teaspoon pepper
- 1/2 teaspoon ginger garlic paste or ginger garlic powder
- 1/2 teaspoon to 1 teaspoon chili powder or paprika, depending on your spice level
- 1 teaspoon mixed herbs of your choice
- 1 tablespoon cornstarch
- 1 cup shredded mozzarella cheese
- 3/4 cup All purpose flour
- 2 eggs
- 1 Cup breadcrumbs (Check homemade bread crumps recipe)
Instructions:
- In a blender, mince the boneless chicken. Add salt as per your taste, half a teaspoon of pepper, half a teaspoon of ginger garlic paste or powder, a half teaspoon to 1 teaspoon of chili powder or paprika adjust it as per your spice level, 1 teaspoon of mixed herbs of your choice, 1 tablespoon cornstarch, and 1 cup of shredded mozzarella cheese. Combine well to form a chicken mixture.
- Make a chicken roll of your preferred size and dust it with all-purpose flour. Keep it aside.
- In a separate bowl, beat the eggs and keep them aside.
- Dip the chicken rolls in the beaten eggs, then into the homemade breadcrumb mixture, and shake off excess. you can freeze them and fry them whenever you want.
- Place the chicken rolls on a cutting board or tray and spray both sides of the chicken generously with oil.
- Preheat the airfryer to 370 degrees Fahrenheit for a couple of minutes.
- In batches, cook the chicken rolls for 5 to 6 minutes on each side until they are cooked through and crispy and golden on the outside.
- Use a silicon mat to avoid mess in the glass door.
- Once done, the crispy airfryer chicken fingers are ready to serve.
