If you’ve ever tried La Madeleine’s tomato basil soup, then you know it’s incredibly delicious and creamy. Now, you can recreate this classic soup, in the comfort of your own home in less than 20 minutes with our simple recipe.
How to make la madeleine tomato basil soup
Before we dive into the details, let’s take a quick look at the ingredients we’ll be using.
Ingredients:
- 1 28-ounce can of whole tomatoes with basil
- 1/4 cup of heavy cream
- 2 cups of chicken stock
- 1 tablespoon of avocado or olive oil
- 1 medium onion, diced
- 1 tablespoon butter
- 1 garlic clove, minced
- 2 tablespoons flour
- 1 tsp dried thyme
- 1/2 – 1 tsp salt (to your taste)
- 1 tsp ground pepper
- 2 tablespoons tomato paste (optional)

Instructions:
- To make the tomato basil soup, start by peeling and dicing a medium-sized onion and a clove of garlic.
- Heat a tablespoon of olive or avocado oil over medium heat with a tablespoon of butter.
- Add the garlic and onion after the butter has melted. Cook them on medium-low heat until they become softened but not browned.
- Once the onion and garlic have softened, sprinkle two tablespoons of flour and stir it in. And cook for about two minutes.
- Then, add two cups of chicken broth, stirring continuously to prevent the flour from clumping.
- Add tomatoes with half a teaspoon of salt, and half a teaspoon of pepper. Cook for around five minutes.
- To enhance the flavor, add a teaspoon of dried thyme, another half teaspoon of salt, and a teaspoon of ground pepper. Continue cooking for five more minutes.
- Stir in a quarter cup of heavy cream and mix it well.
- Now it’s time to blend the soup. You can either use an immersion blender or a regular blender.
- After blending, taste the soup and adjust the seasoning to your taste. If you feel the tomatoes need more flavor, add a tablespoon or two of tomato paste and stir it in.
- Let the soup simmer for ten minutes. Once it’s done, serve it in bowls. Enjoy your delicious homemade tomato basil soup.
You can top it with garlic croutons or goat cheese crumbles. My personal favorite is to serve it with grilled cheese sandwiches that have jalapenos in them. If you prefer a vegetarian version, you can use vegetable broth instead of chicken broth.
